Helen Liang’s Chocolate Honey Oat Raisin Brownies
Chock-full of yummy goodness

Ingredients
225g dark chocolate (70% cocoa solids)
275g unsalted butter
100g plain flour
1 tsp baking powder
325g honey
4 large eggs, lightly beaten
1 tsp vanilla essence
100g oatmeal
85g raisins
85g dark chocolate chips

Preheat oven to 170ºC. Line a 30x20x3.5cm (12x8x1.5in) tin with lightly buttered greaseproof paper or foil. Place the dark chocolate and butter in a large bowl, and put over a pan of simmering water. Allow chocolate to melt. Sieve the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in honey. Add eggs and vanilla essence. Fold the flour, oats, raisin and chocolate chips into the melted chocolate. Pour the chocolate mixture into the prepared cake tin. Bake for 20-25 minutes. The top should be firm but the inside should feel soft when done. Allow to cool in the tin. Remove the brownies from the tin and cut into required shape.

Can’t-go-wrong classic cookies

Ingredients
120g sugar
250g butter
1 egg
260g cake flour
1g salt
140g almond powder

Blend sugar and butter until the mixture is soft; then slowly add eggs. After mixing properly, add flour, salt and almond powder. Continue to blend the items. Put dough in freezer to chill for a few minutes. When chilled, take a tablespoon-size lump of dough, flatten with a rolling pin. Use a fun shaped mold, like a star or animal shape, for a touch. Brush egg on top of the cookies and cook for 10-12 minutes at 180º C or until golden brown. Makes 70 cookies.
