Guangyou Zhao’s Iced Fruit Curd
Tangy, refreshing treat

Recipe

Milk
Fermented glutinous rice juice
Fresh walnuts
Fresh almonds
Sugar (or xylitol)
Strawberries
Dill

Mix the milk and fermented glutinous rice juice 木糖醇 (mù táng chūn) at a 4:1 ratio. Then add the fresh walnuts and almonds. Gently simmer for 20 minutes. Allow it to cool, forming a soft and smooth spread. Puree the xylitol and the washed strawberries in a blender or food processor. Place the strawberry sauce in the freezer until firm. Scoop a ball of the strawberry sorbet and place it on top of the chilled curd. Decorate with dill.

Recipe

500g spinach
50g cream cheese
1 tbs ginger and garlic paste
100mL fresh tomato puree
50ml milk
2.5g black pepper powder
1g red chilli powder
1gm turmeric powder
Salt
2 tbsp oil

Wash and blanch the spinach. Fine chop the spinach. Heat the oil and add the ginger and garlic paste, spinach and all spices – saute for one minute. Add the tomato puree and cook for three minutes, then mix in the milk, and half of the cream cheese (25g). Cook until the water evaporates – mixture should be creamy. Pour onto a plate and garnish with the remaining cream cheese.
