Fast Food: Xiong Guangzhou’s Thai-Style Prawn Salad

Ingredients
200g bean thread noodles
1 clove garlic, crushed
2 tablespoons fish sauce
1 tablespoon lime juice
2 tablespoons peanut oil
35g unsalted peanuts, coarsely chopped
2 stalks of green onions, sliced thinly
¼ cup fresh coriander
2 cups small red Thai chillies, seeded and sliced thinly
1kg cooked prawns, peeled

Place noodles into a large heatproof bowl; cover with boiling water. Let stand until just tender; drain. Using kitchen scissors, cut noodles into random lengths. Whisk garlic, sauce, juice and oil in large bowl to combine. Add noodles to bowl with nuts, onions, coriander, chilli and prawns; toss gently to combine. Serve immediately.
