Easy-to-Make Pumpkin Delight

Serves 4-6

5g dried goji berry (枸杞)
1kg golden pumpkin
10g morel mushroom (羊肚菌)
80g broccoli
1 cup chicken (or vegetable) stock
60g "chicken leg" mushroom (鸡腿菇)
60g straw mushroom (草菇)
100g abalone mushroom (鲍鱼菇)
50g cooking oil
25g cilantro
salt and pepper

Start by soaking the goji berries in a bowl of boiled water. Cut off 1/3 off the top of the pumpkin and scoop out the seeds. Steam the pumpkin for 15-20 minutes and set aside to cool. Then sauté the morel mushrooms and broccoli with good quality stock. Cut the remaining mushrooms into small pieces and fry them with oil in a wok. Add cilantro and seasoning to taste. Fill the steamed pumpkin with the fried mushrooms and top with the goji berries. Place the pumpkin onto a deep plate and garnish with broccoli and morel mushrooms.
