Serves 4 四人份
Spaghetti 400g 意大利面400克
2 large eggplants 两个大茄子
1 onion 一个洋葱
6 cloves of garlic 蒜六瓣
2 chilli peppers 两个辣椒
500ml of tomato sauce 番茄酱200毫升(意面用)
1 bunch fresh basil 新鲜罗勒适量
100ml white wine 白葡萄酒100毫升
100ml extra virgin olive oil 初榨橄榄油100毫升
Parmesan cheese, grated 帕尔马干酪,磨碎
Salt and pepper to taste 盐和胡椒适量
Cut the eggplant into pieces. Fry them golden brown in some of the olive oil and then take them out of the pan.
将茄子切片。用橄榄油将其煎至金黄取出。
Fry the onions, garlic and chilli in oil.
将洋葱,大蒜和辣椒放到锅中轻炒,
Deglaze with white wine, and add the tomato sauce.
然后加入白葡萄酒和番茄酱。
Cook the spaghetti.

Serve with the tomato sauce and garnish with chopped basil and parmesan.
