Hwa Wu is one busy woman. Raised in Los Angeles, this Chinese-American mom has three kids: 3-year-old Marcello, 2-year-old Penelope, and 1-year-old Maurizio. Though her background is in PR, Hwa’s two great passions are baking and drawing. Four months ago, she started a bilingual cooking club called ABC Kids Club for parents and kids aged 2-10. The sessions take place weekly and are held at Hwa’s apartment near Chaoyang Park. Class sizes range from four to 20 students and include built-in play time to give young bakers a break. Just in time for the Year of the Horse, Hwa shares a recipe for colorful and fragrant gingerbread horse cookies with help from her daughter Penelope. Ingredients 配料
Makes approximately 20 cookies 大约可做20块饼干
3 cups of plain flour 3杯面粉
1/2tsp of baking soda 1/2茶匙小苏打
1/2tsp of baking powder 1/2茶匙发酵粉
1/2 cup of butter 1/2杯黄油
1/2 cup of brown sugar 1/2杯红糖
2tsp of cinnamon powder 2茶匙肉桂粉
2tsp of ginger powder 2茶匙姜粉
1 egg 1颗鸡蛋
75ml of honey 75毫升蜂蜜
75ml of molasses 75毫升糖浆
Dash of nutmeg (optional) 少许肉蔻(可选)
Dash of cloves (optional) 少许丁香(可选)
Preheat oven to 175°C. Mix flour, baking soda, and baking powder in a large bowl.
烤箱加热到175摄氏度。把面粉、小苏打、发酵粉倒入大碗中混合。
In another large bowl, mix room temperature butter, brown sugar, and spices. Add the egg, honey, and molasses. Gradually mix in the flour.
再拿一个大碗,把黄油(室温)、红糖、香料混合。加入鸡蛋、蜂蜜、糖浆,然后慢慢在面粉中搅拌均匀。
Knead the dough into a ball and refrigerate for one to two hours. Roll out the chilled dough, then cut out horse shapes using a cookie cutter or a homemade template. Hwa recommends finding a horse shape you like, tracing it, cutting it out of wax paper or normal paper, placing it on the dough, and cutting around the shape with a knife.
把面粉揉成球,放入冰箱冷藏1至2个小时。然后把面团拿出来,用小马形状的饼干模具或自做的饼干模具刻好面团。吴华推荐大家找一个喜欢的小马形状,在蜡纸或普通纸上描下来,然后放在面团上,剪出个小马形状。
Bake the dough for about eight minutes until it turns just a bit golden.
把面团放入烤箱,烤差不多8分钟,此时面团应该烤至金黄。
Let cool, then decorate the cookies with icing using piping bags.
取出冷却后,用裱花袋稍作装点。
