Time to put away the chocolate eggs for another year! But for a protein-rich breakfast or brunch to jump-start your day, try one of these three recipes for Turkish Eggs; soft eggs (poached or baked) with creamy garlic yogurt, smokey, spicy butter, and wilted herbs and greens.
This recipe calls for poaching eggs, but promises a "fool-proof" method, and has a simple ingredient list it should be possible to fill in Beijing. (If you can’t find sage, you could substitute mint, as in this recipe).
As pictured above, this dish omits the wilted greens, but calls for Aleppo pepper. Good luck finding that ever, but especially right now, as it hails from Syria. You can substitute with the sweet paprika and cayenne pepper mix described here.
