Hola Hola Pizza

Serves 6-8
Pizza sauce
Makes 2½ cups
5 tsp olive oil
½ onion, chopped
4 garlic cloves, minced
350g tomato, chopped
95g tomato paste
A few sprigs of fresh basil
Salt and pepper to taste
Heat the olive oil in a large frying pan on medium heat. Add the chopped onion. Reduce the heat to low, cover the frying pan and cook for 15 to 20 minutes, stirring occasionally until the onion has softened. Remove the cover and add the garlic. Increase the heat to medium/high. Cook the onion and garlic together for 30 seconds. Then, add the tomatoes (including the juice), the tomato paste and the basil. Season with salt and pepper to taste. Bring to a low simmer, and cook uncovered for around 15 minutes or until thickened. For an extra smooth consistency, blend the sauce using an immersion blender.
Pizza base
1 tsp dried yeast
375ml water
5 cups white flour
4 tbsp olive oil
1 tsp salt
1 tsp sugar
In a bowl, dissolve the yeast in water and let stand for 10 minutes or until creamy. Then, add the flour, olive oil, salt and sugar into the yeast mixture. Stir well to combine. Cover the bowl with a cloth and leave the mixture to rise until the dough has doubled in size (about 30 minutes). Meanwhile, preheat oven to 275°C. Turn dough out onto a well floured surface. Form dough into a round and roll out into a thin pizza base.
Toppings
40g ham
80g mozzarella
80g fresh pineapple, sliced and grilled
20g cheddar cheese
Spoon the pizza sauce onto the base, forming a thin layer. Then, sprinkle on the cheeses, ham and pineapple. Place the pizza into the 275°C preheated oven. Bake until the base is crisp and the cheese has melted. Serve hot and crispy.
