Talking about Tangyuan (汤圆, glutinous rice dumplings) always reminds me of Lantern Festival. But it is actually a very traditional Chinese snack eaten at different times of the year, especially during the Spring Festival in the south of China. Because of its round shape, people consider it as a symbol of togetherness and reunion.

Last time we mentioned the “dumplings or Tangyuan” debate in China and learned how to make dumplings with Connie K from Black Sesame Kitchen. This time, let’s learn how to make Tangyuan with their special recipes:

Ingredients

For the sweet rice dumpling dough:
2 cups sticky rice flour
1 cup water

Filling (options):
Red bean paste *
Black sesame paste *
Brown sugar **

*If using sweet bean, nut, or sesame paste, form it into small balls, about 1.5cm in diameter. Chill in the freezer for a few minutes to firm up.
*If using Chinese cane sugar, break it into small chunks.

Directions

1. Knead the dough:

Place the rice flour in a large bowl. Stir in half cup of the water, working the water into the rice flour with your hands. Slowly add more water, a little bit at a time, mixing thoroughly so the water is fully incorporated before adding more. Stop when the dough is springy and soft, not too dry but not slippery. Cover with a damp cloth before filling.

2. Wrap around fillings:

Divide the dough into equal-sized balls about 3 cm diameter. Press your thumb into the center of a dough ball to form a well, place a piece of filling inside, and pinch up the dough to enclose it. Roll it between your palms to smooth the dumpling. Continue with the rest. When the sweet rice dumplings are filled, set aside the ones you want to cook and eat right away apart from the ones you may want to freeze for future use.

3. Cook the sweet rice dumplings:

Fill a pot with water and bring it to a boil over high heat. Add the sweet rice dumplings in batches of 10-15, and when the water returns to a boil, cook for 2 minutes. Add a cup of cold water, to cool down the temperature so that it continues to boil the sweet rice dumplings gently while the water comes to a boil again. Cook for another 2 minutes until the dough becomes translucent and the dumplings float to the top.

We met Connie K from Black Sesame Kitchen at INN’s Spring Festival Traditions event on January 12 (Monday), and she showed us how to make dumplings and Tangyuan in a quick and easy way.

Let’s learn how to make dumplings first! Here are the recipes for dumplings she shared with us:

Ingredients

¾ lb ground pork (or your choice of ground meat or seafood)
½ cup water
¼ cup light soy sauce
1 teaspoon dark soy sauce
1 ½ teaspoon salt
½ teaspoon each: white pepper, chicken bouillon
1½ teaspoons finely minced ginger
1 tablespoon finely minced leek, white part only
1 large egg
2 tablespoon vegetable oil
2 cups of your choice of shredded or finely minced vegetables *
1 tablespoon sesame oil

For the dumpling wrappers: **
4 cups all-purpose flour
2 cups water

* For vegetarian dumpling filling, shredded and chopped carrot, chopped re-hydrated shiitake mushrooms, and diced dry tofu are recommended.

** If you don’t have the patience for making the wrapping, go to a local market and buy a stack of the wrappers, called jiǎozi pí（饺子皮）.

Directions

1. Knead the dough:
Place the flour in a large bowl. Stir in 1 cup of the water, working the water into the flour with your hands. Slowly add more water, about ¼ cup at a time, mixing thoroughly so the water is fully incorporated before adding more. Stop when the dough is springy and soft, not too dry but not slippery. Transfer to a clean surface and knead for 3 to 5 minutes. Cover with a damp cloth and let sit for at least 10 minutes.

2. Make the filling:
In a bowl, mix together the ground meat, leek, ginger, soy sauces, salt, white pepper, chicken bouillon, and cooking wine. Add water about ¼ cup at a time and beat into meat mixture until you’ve used all the water and it has been fully beaten into the meat mixture. Always beat meat mixture in one, circular direction. The pork should have the consistency of a thick cake batter. Add a raw egg and mix another 20 to 30 strokes. Blend well. Add the vegetables and sesame oil. Blend well. Add oil and mix through. The filling is now ready to fold into the dumpling wrappers.

*If you want to add any veggies, just chop them up into little pieces and then add them to the meat mixture. Add sesame oil, salt, and maybe some white pepper so that you make sure you flavor the veggies as well. If you’re adding zucchini, eggplant, napa cabbage, or any other veggie that that has a lot of water in it, then chop it up, salt it, seat it, the squeeze out the moisture, then add it to meat mixture.

3. Roll out the dumpling skins:

Divide the dough into three equal pieces. Roll each piece into a long rope, about ¾ inch in diameter. Slice the ropes into½ inch-‐long pieces. Lightly sprinkle the pieces with flour, and roll them with one hand on the counter to form balls. Squash each ball with the center of your palm to flatten it like a silver dollar.

Sprinkle flour over the dough and work surface. Working with a rolling pin and one piece of dough at a time, start from the center of the dough and roll outward, then roll back to the center. Turn the dough a few degrees and roll again. Continue rolling, turning the dough in the same direction, until you have made a full revolution. The dumpling skin should be flat and round and slightly bigger than your palm. It probably won’t be a perfect circle the first time you try, or the second, for that matter. Your technique will improve as you go along.

Stack the wrappers and cover with a damp cloth to prevent them from drying out while you finish rolling. Use them immediately.

4. Wrap the dumplings:

Place a dumpling skin in your palm. Scoop a dollop of filling in the center of the skin. Fold the skin in half, and pinch the top of the semicircle together. Starting from one side, pleat and pinch the edges until the filling is fully sealed and the dumpling has the shape of a crescent.

5. Cook the dumplings:

– Boiled Dumplings:
While you are wrapping, fill a large pot with water and bring it to a boil over high heat. Add the dumplings in batches of 20, and when the water returns to a boil, cook for 5 minutes. Drain and serve immediately.

– Pan-‐Fried Dumplings:
Heat a flat-‐bottomed pan and add a layer of oil to coat the bottom. Place the uncooked dumplings in a single layer on the pan, making sure that each dumpling gets a bit of oil on the bottom of it. Add hot water ¾ of the way up the dumpling and cover for 7-8 minutes or until the water is almost evaporated out of the pan.

*Check the bottoms of the dumplings in the center of the pan to see if the bottoms have browned and crisp. Serve once it has reached the desired crispiness.

*(Optional) Add about a tablespoon more oil around the pan to crisp the dumplings up even more.

6. Make chili sauce:

Heat ½ cup of oil in a wok for 3 minutes on high until oil is about 140 degrees Celsius. Place a few tablespoons of ground chili peppers in a heat-safe bowl. (If you like, you can also add some garlic, leek, ginger, salt, and/or coriander.) Pour the hot oil over the chili peppers and mix thoroughly. Let it cool before serving.

Stay tuned, the recipe for Tangyuan will be posted tomorrow!

Fall is upon and summer is almost out, and we all know what that means – new expat arrivals to Beijing and the INN’s biggest gathering of the year! Arrival Survival is here to help those who are new to the city find their feet. This year Expat Connection is partnering with INN at Arrival Survival to help make life a little easier as you and your family settle in the capital city.

It’s hard for those of us who have been around a while to remember the initiation phase we all went through when we first arrived in Beijing. Learning to navigate your way around the city, a new job, and new social circles might be just a distant memory for many expats already acclimatized to life here, but for some this is brand new territory.

INN’s Arrival Survival is an informative morning, jam-packed with great guest speakers discussing topics ranging from from safety and emergency tips, transportation, and getting around town, telecommunications and internet tips, WeChat and other useful apps, banking, cashless payments, air and water quality, and social activities, just to name a few! These are topics I know I could have done with getting to grips with at the beginning of my Beijing journey. Three years on, and I’m still on a journey of discovery when it comes to finding out how to make life easier in this vast expanse of a city.

This is a great opportunity to find out what you need to know to make the early days a little less stressful. INN will also have awesome vendors and businesses in Beijing at the gathering who can make life in Beijing more enjoyable and accessible. Guests can stop by their tables, exchange contact information and more importantly, ask questions. It’s also a chance to make your first expat friends, some of who might just become life-long besties!

Don’t miss out! Spread the word and invite your expat friends and new acquaintances. Coffee, tea, and pastries will be provided throughout the morning, and the event will be the perfect opportunity to show how wonderfully well connected and welcoming our Beijing expat community is. For more information contact WeChat: INNBeijing1994 or visit: www.innbeijing.com.

My first few months in Beijing were a roller coaster ride, and I thought then that living in the city was quite linear: home, work, party, dining out, or travel. And I’ve observed that many who don’t speak Chinese still would rather join their diaspora or stay in their cocoons, instead of exploring and enjoying what the city has to offer. Don’t get me wrong, but sooner or later this kind of lifestyle will get exhausting and repetitive. Luckily for us here in Beijing, there are community groups that can help you expand your horizons and live your life to the fullest in an Asian megalopolis.

Such a group is the International Newcomer’s Network (INN), an all-volunteer organization which has been in Beijing since 1994. Our friends there have been organizing meet-ups, get-togethers, and info sessions to help newcomers to the city. Now, INN is looking for new faces to join the team.

Here’s a list of some of the soon-to-be-open positions at INN.

– Trekkie coordinator – Like exploring new places in and around the city, and want to share your findings with others? If yes, then this is the position for you! You don’t have to be someone who knows every bit of inch of Beijing, nor even speak the language to take this adventure on. The time commitment is one day or half day a month, plus attending board meetings and/or general gatherings.
– Secretary – Are you efficient and a good note-taker? INN needs someone to take the notes at their monthly board meetings and then remit minutes to the board. The time commitment is a couple of hours one time a month, plus attending general gatherings.
– Treasurer – Are you good with money, budgets, and proficient in Excel? INN needs you to collect, account, report, and distribute money. The time commitment is twice a month: board meeting and general gathering.
– Sanlitun Coffee Morning Coordinator – Like to meet and chat with new people? You would host the coffee morning in Sanlitun every third Tuesday of each month and keep the conversations going. The time commitment is once a month (2 hrs), plus board meeting and general gathering.

An INN Coffee Morning at The Bookworm in Sanlitun

INN President Juli Bradley says that one of the best things about the group is that it is very diverse, with members hailing from different countries such as Germany, Iran, US, Canada, Malaysia, and many others. Bradley adds that INN helps newcomers feel like they are making a difference, and that their time and opinions are truly appreciated.

INN’s recent spring bazaar, which featured more than 20 vendors from the expat and local communities.

INN events like bazaars and gatherings help link newcomers, old-time expats, and communities together.

Bradley says the positions are open to everyone – newcomers or experienced expats alike. If you are interested or would like to know more, contact Bradley via Wechat: JulesBeijing or email INNBeijing16@Outlook.com. You’re also welcome to join a board meeting to see the team in action before committing.

All ages. Our sister publication, the Beijinger, brings back its annual Pizza Festival at Wangjing Soho for what will be the fourth celebration of all things cheesy, saucy, doughy, not necessarily triangular, but certainly squarely one of our favorite foods ever to exist. Following the success of last year’s event, at this year’s two-day carnival-themed festival we’ll have entertainment fit for all the family in the form of some of the city’s best live performers, as well as carnival games, magic shows, and carnival dancers, and of course, unlimited amounts of the city’s best pizza, snacks, and drinks. We’ve even invited the Guinness Book of World Records to witness what will hopefully be the biggest dough toss of all time. RMB 25 at the door (food and drink not included), RMB 20 presale (free picnic blanket included). The Beijinger.
